Weekend Health Clinic: Sweet Potato Pudding

Ingredients
4 cups of sweet potatoes
1 tablespoon lime juice
3/4 cup sugar
2 eggs
2 tablespoons butter
1/2 cup coconut milk
1/4 cup of rum
grated rind of lime
1/4 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon powdered cinnamon
1 tablespoon raisins
To mashed potatoes, add sugar gradually and whole eggs, one at at time, mixing well after each addition. Mix in butter with a fork. [...]
